Chinese Salt and Pepper Wings

You’ll need

serves 2

1kg chicken wings, separated into drums and flats

2 tsp salt

2 tsp white pepper

2 tsp msg (optional)

2 tbsp light soy

2 tbsp shaoxing wine

4 garlic cloves grated

5g ginger grated 

Cornflour/potato starch

Salt 

White pepper

Veg oil for frying 

2 tbsp sesame oil

1 onion finely sliced 

2-3 fresh chillis sliced 

2 garlic cloves finely sliced 

5g ginger finely sliced 

1 tbsp msg (optional)


Method

1. Marinate the chicken wings in the above for up to 24 hours 

2. Dredge the wings in the seasoned cornflour tapping off the excess

3. heat your veg oil to 180c and fry the wings for 5-6 mins they will be super crispy and golden. Season again with white pepper 

4. heat the sesame oil and soften the veg slightly before adding the wings and tossing it all through
