Soy Braised Short Rib

You’ll need

  • 4 single muscle beef short rib

  • 50ml dark soy

  • 50ml light soy

  • 100ml mirin

  • 50ml rice vinegar

  • 3 shallots peeled, roughly diced

  • 6 garlic cloves

  • 50g black treacle

  • 500ml water


Method

  • blend together the soys, mirin, vinegar, shallots and garlic

  • Pour this over the ribs and cover to marinate for at least 4 hours but preferably 8

  • Pre heat your to 120c fan, pour in the water to the marinated beef cover with tin foil and cook for 8 hours in the oven

  • With the remaining stock/liquid strain this through a sieve and reduce down with the treacle until thick and sticky to glaze the rib

  • serve with honey and chilli roasted root vegetables
